InterContinental Barossa: 150 rooms among the Williamstown vines, due in 2028
IHG and Strategic Alliance plan the first international-branded luxury hotel in a South Australian wine region. The state approved it in May 2026.
The Barossa has never had a luxury hotel under an international brand. InterContinental Barossa Resort & Spa is meant to be the first. IHG Hotels & Resorts signed on in March 2025 to run the 150-room resort for developer Strategic Alliance, with an opening scheduled for 2028.
In May 2026 South Australia’s Minister for Planning approved it. That was the step the 2028 date had depended on.
The site
The resort is planned for Williamstown, among the hills and vineyards of the Barossa. Alongside the hotel, the plans include a new boutique winery, a cellar door and revitalised vineyards.
IHG says every room will have a view of the landscape, and some will have balconies over the vineyard and cellar door.
What it will have
Food leads the plans. There is a 130-seat signature restaurant, a lounge bar and an outdoor garden terrace, plus a Club InterContinental lounge. For the rest of the day there is a pool, a day spa, a fitness centre and walking trails, and the resort will carry conference and meeting space as well. That makes it as much a venue for corporate retreats and special events as a place for a wine weekend.
Not everyone wants it
Approval did not come quietly. A group of local residents, including Barossa wine identity Matthew McCulloch, tried to stop the project, and WBM Online reported their objections after the decision.
Our view
The Barossa stays in our directory are small: The Louise, for one, has fifteen suites. A 150-room branded resort is a different animal, built for groups and events as much as for couples. Whether that suits the valley is the argument the locals are having, and it will shape how the resort is received when it opens.
