Crystalbrook Collection announced reservations for Crystalbrook Sam on 9 September, ahead of its planned late-December 2026 opening in Adelaide. Crystalbrook’s announcement puts its first South Australian hotel at 196 rooms on Halifax Street, three streets south of Adelaide Central Market. The Urban Developer reported an earlier figure of 175 rooms in its coverage of the project’s approval. Rooms are now on sale ahead of the planned late-December opening.

Opening rates begin at $275 a night, with accommodation ranging from king and twin rooms to interconnecting family rooms and suites reaching 78 square metres. The starting price makes the announcement tangible, though it says little about the cost of a suite or a peak-date stay.
A more specific opening window
In March, the opening was scheduled broadly for late 2026; Crystalbrook’s April statement likewise placed the debut later in the year. Late December sharpens that timetable without moving it outside the original year. The advance sales window also gives agents time to work the hotel into summer itineraries.

Local design and rooftop dining
South Australian sculptors and makers will contribute works throughout the building, extending the art programme beyond the lobby into bedrooms and dining and wellness spaces.
Family Rooms combine two bedrooms and two bathrooms across approximately 60 square metres, while Urban Suites provide a separate living room and deep-soak bath in up to 50 square metres.

Café Sami will serve morning coffee, while rooftop restaurant Matines will focus on South Australian produce cooked over fire with city views. Eléme Day Spa and a heated outdoor swimming pool are also planned. The rooftop gives locals a reason to visit without booking a room.
Adelaide’s hotel-building wave
InDaily reported that Tourism Minister Emily Bourke expected 1,000 hotel rooms to open statewide over the following 12 months, linking the activity to major events including MotoGP. That statewide forecast puts Sam in a broader building wave, well beyond its immediate city competition.

The hotel also plans three adaptable meeting and event spaces accommodating more than 100 guests. Alongside family rooms and rooftop dining, that gives Sam several ways to attract business after the opening attention fades. The kitchen and dining room at Matines
Enrique Mancilla will lead the Matines kitchen, Crystalbrook Collection announced. The opening menu includes charred razor clam from Smoky Bay served with macadamia cream, pickled kohlrabi, nashi pear and a smoked pandanus dressing.
Local architecture firm PACT designed the restaurant using locally sourced copper. Diners will sit near an open kitchen and live-fire grill, while the bar stretches nine metres.
