Saffire Freycinet is adding a three-bedroom Jewel private villa on Tasmania’s east coast, according to Luxury Lodges of Australia’s announcement. The residence spans 800 square metres, with an ensuite for every bedroom and a dedicated guide and concierge team.

Saffire’s existing lodge has twenty suites overlooking Great Oyster Bay and the Hazards Mountains. A staffed residence of this size changes how a group can stay at an already small lodge.

A private villa within Saffire

Plans for a three-bedroom villa separate from the main lodge were announced in December 2024. Reservations opened in April 2026 for stays later in the year. December gives that long-planned expansion a firmer place in the calendar.

The existing lodge offers Luxury Suites, Signature Suites and Private Pavilions. Jewel’s advertised area includes both indoor and outdoor space. Even allowing for that distinction, this is a substantial departure from Saffire’s suite-sized stays. The group can share a residence while retaining separate bedrooms.

The scale and the service

An 18-metre infinity pool and private wine cellar form part of the villa, whose materials draw on granite, lichen and charred timber. The private guide matters as much as the extra space. Personal attention is a large part of the promise when a group books its own residence within a lodge.

Circa Morris-Nunn Architects designed the original lodge with a manta-ray-like form following the Freycinet coastline’s contours, while floor-to-ceiling windows frame the pink granite of the Hazards Mountains. That connection to the landscape gives Jewel’s granite and timber a recognisable starting point.

Saffire’s established signature experiences include oyster shucking at a working farm on Great Oyster Bay and beekeeping with the lodge’s own hives. At Palate Restaurant, ingredients come from local farms and the bay.

The lodge’s existing nightly rate includes breakfast, lunch and dinner at Palate, selected drinks throughout the day and a premium minibar replenished daily, alongside its signature experiences.

Interior refurbishment of the main lodge’s guest suites is also underway.

A December opening to watch

Saffire advanced from Two Michelin Keys in 2025 to Three Keys in 2026. That promotion raises expectations for the villa’s service before its first guests arrive. The wider results are covered in our Australian Michelin Keys report.

Picnic Island offers an all-inclusive private retreat off Coles Bay for eight guests, with a private chef and dedicated skipper. Jewel adds another version of group privacy to Coles Bay.
